here is the recipe of the famous « chebbakia » or « griwech » (depending on the region), a must during the month of Ramadan, it is mandatory on every Moroccan table during this holy month.
It is based on sesame seeds and honey, delicately scented with anise, cinnamon and orange blossom … fragrances that make you dream and announce the approach of Ramadan.
Chebakia is usually prepared in family and in large quantities, and it is preserved for several weeks in a hermetic box.
1 kg of white flour
200g of wheat flour
2 egg yolks
250g ground sesame seeds
½ cuil. coffee gum arabic
80g of melted butter
15 cl of neutral oil
1 tbsp. ground anise
1 tbsp. ground cinnamon
A dose of pure saffron powder
8cl of orange blossom water
2 tbsp. vinegar
½ sachet of baking powder
Frying oil and honey
In the bowl of the mixer, put all the ingredients (except the cooking oil and the honey of course).
Leave to knead, adding a little water if necessary until you obtain a ball of soup and homogeneous paste.
Divide this ball into 3 or 4 and spread each with a baking roll (flouring the worktop).
Cut the dough with a roulette or chebbakia cutter
Train chebbakias by lifting one thong out of two (see photo): 3 thongs on one finger and the other two on the other finger.
Gently turn each chebbakias, the goal is to give it a braided appearance.
Train the other chebbakias in the same way and fry them in a hot oil bath.
Once the chebbakias are golden brown, remove them from the oil and immerse them immediately in slightly warm honey.
Drain and let the cakes cool completely before sprinkling with sesame seeds and serving (or keeping).
